Snack Time: Chicken Avocado Burritos

It’s thought that healthy food doesn’t taste good–or at least that its hard and takes a lot of effort and time. But it’s not as hard as one might think, especially when it comes to snacks. Sometimes you want a snack that’s tasty and doesn’t take a ton of time to make. Chicken avocado quesadillas are the perfect way to do that.

Ingredients:
– 2 cups cooked shredded chicken (or a meat of your choice I used venison)
– 1/2 cups grated cheese (I used cheddar)
– 1 avocado diced
– 4 large tortillas
– 1 tablespoon vegetable oil
– steamed rice (optional)

Instructions:

1. In bowl mix the cooked meat of your choice, cheese, diced avocado and rice (opt.).
2. Lay a tortilla flat on a plate and add 1/4 of the mixture.
3. Fold tortilla into a Burrito.
4. Repeat the process for all four tortillas
5. Heat pan or griddle. Pour 1 tablespoon of oil onto heated pan or griddle.
6. Place all four tortillas onto pan and cook for 2 minutes or until golden brown. Flip tortillas and repeat.
7. Serve and enjoy.
